Oshibori Udon

Oshibori udon is a local dish from Sakaki Town, Hanishina District, made with small, pungent daikon radishes called “karami daikon.” These are grated and strained, and the liquid strained out of them, called “oshibori,” is mixed with miso and other flavorful ingredients, to make a dipping sauce for freshly cooked udon noodles.
